This is confusing.... I know that there is a lot of money spend on
the restoration of old oil paintings...
More clarification is required!

Indeed, indeed ... more clarification needed.

From what I have read, the degradation of the paintings is in general due to a variety of factors ... poor materials,
poor storage conditions, damage in transit, light fading, etc. I have never read that degradation is due to the hardening
of the oils used in the paints adversely affecting the support medium. (Of course painting over cement-based substances is a problem.)
But, I am not an oil painter, nor a trained conservator, and I certainly cannot claim any expertise in these matters. That is why I asked
for the references.
