Hello Bareners,

Here's a question especially for you Moku Hanga-ka. In discussions on
my blog about difficulty sharpening my 6 mm hangi toh (knife), I
discovered that mine may be an unusual shape. It's from a Michi
Hamono set that Woodlike Matsumura sells and it has a distinct
secondary bevel, which you can see in a photo found here:

knife.html

Is this unusual?

Thanks,
Annie

I can't vouch for hangi tohs, but it's common to put a secondary micro-bevel
on chisels, plane irons etc. However the extra bevel in your photo is much
larger than that. Hum...

My toh has a bevel on both sides. This may be because I ordered a
left-handed toh. It seems to cause me no problem, but I was of the impression that my
toh would only have the bevel on one side, for the left-handed carver. I am
not sure where I ordered it.

Hmmm ... You say that you sent your knife 'out' for sharpening, so I
can't say with any conviction what shape it has _now_, but when you
took it out of Michi Hamono's box, there was certainly no double bevel
on the blade.

The photo you link to shows a perfectly normal blade. You may be being
confused a bit by the fact that it is made up of two kinds of _steel_,
which have different colours.

(Perhaps your sharpener guy was also confused by this, and put a
different angle on the blade where the steel joint falls. If so, then
please re-sharpen it to a 'flat' bevel, as this would severely handicap
your cutting ...)

There is a section on my site that describes the two-layer construction
of the knife:
http://woodblock.com/encyclopedia/entries/014_01/014_01.html

And some close-up photos showing clearly a 'non-beveled' bevel are on
this page - dedicated to a knife I inherited from Ito-san the carver:
http://woodblock.com/encyclopedia/entries/014_06/014_06.html

(Nice knife you have there Annie - well worth the money to get a good
one like that!)
