I think it depends on how warm the weather is when you are printing too. Sumi is made from lampblack (a kind of vegetable oil/soot), water, and bone glue. It could be the combination of these things which give it that special odour. Just ask Maria. Unless it's a waterleaf (spray and stack) I toss it into the sink, or tray, for 15 minutes to several hours depending on the paper and the days events, blot it between old bath towels, and put it into a paper pack to keep the dampness consistent as I work and because it is faster to print when all I have to do is reach in and get another sheet rather than trudge to the sink/tray, blot, and back again. I'm betting from the size that he is using Rives lightweight and it should work if dampened. It has been my luck that I just never learned to get a really rich impression on dry paper. If I did manage one out of ten, then the ink dried with a look I didn't care for, so I advocate for dampened paper. Does everyone know the trick of dusting your hands with baby powder if you get a little ink on them? It helps to keep your paper clean and you don't have to wash them every time you get a little ink on them.
